I made some ugly experimental soup. Beef Dumpling soup.
It absolutely delicious!
It’s ground beef simmered in beef stock seasoned with onion, garlic, Worcestershire sauce, smoked paprika. I made my grandma’s dumpling recipe. I topped it with Top the Tater and parsley.

Made plenty of party trays at work these past few days. I hope everyone have a festive holiday time. I’m planning on visiting family for lunch; then cuddling up with my cats(and spouse!) with A Castle For Christmas on tv and chili in my belly.

Dinner tonight is at La Tequila taco shop in Hibbing. I could only eat half of my Cubana Tortas. I’m taking home my Esquites and a shrimp Sope. I’m so full.

Mushroom raviolis in a spicy red sauce with Italian sausage. Along side is a salad of veggies that need to be eaten in a balsamic dressing. I know no one sees my posts but it still brings me joy.

So I made Tim Walz’ New Ulm hotdish! Definitely a keeper! It’s as if beer cheese and brat soup had a baby with tater tots. So freaking delicious! I also made a broccoli salad yesterday and having it with dinner tonight.
