Try without sometime. I like a mix of mostly beef with a little pork or turkey or lamb venison or buffalo or whatever just for depth, & a beer with a corn adjunct like coors (surprising how well shit American beer cooks down!). Go to town on fresh & dried chilis & powder. Meat gravy, why not?

I like fresh tomatoes as a topping, but in the chili itself changes the base to something different. I am totally not knocking taste or preference, just that it's a very old dish with the highlight on meat and chilies. Not gonna die on this hill, not starting a fight :)

Chili powder, meat, onions, garlic, oregano, liquid. Variations galore from there, but beans go on the side and adding tomatoes make it Bolognese. Not that the other things are bad, but it's misleading to call Cincinnati bean sauce chili, it's closer to mole. And vegetarian chili is just bean soup!

Late, but I've been wondering if you've had a chance to peruse the oral histories of people from the Silent Era in the AFI's archive. I worked on part of that (reviewing transcriptions for accuracy, adding to the finding aid) and found piles of cool stuff! Many interviews yet to get online.
