The stems can be dredged w/ flour/egg/breadcrumbed & fried. Served w/marinara. Kinda like (or alongside) zucchini or mozzarella sticks. With lots of greens I also get ricotta and do a “florentine” of pasta, pizza, & other dishes. Spare greens get blanched & frozen, used as spinach.
