spent this weekend rallying for protecting trans kids, gardening in my apartment's balcony, and eating yummy food.

finished a long shift at work (12 hrs +) came home to this last night. needless to say i’m up for a plumber having to fix a leak. i’ve shut off my water for now and have worked overnight to dry it as much as possible, hoping carpet isn’t going to mould.

this picture shows a beige carpeted floor, huge damp marks spots can be seen as water has leaked into the carpet from a water leak.

tried this local cafe called “The Green Edge” and omg these pancakes were so filling, genuinely couldn’t eat it all 😅 definitely will be going back to try the rest of the menu!

the japanese auction sites are too tempting… it’s a retro sony vaio p umpc that’s small enough to fit in a pocket.. with a 21:9 screen!! so silly but i want one so so bad!!

got a Moka pot for the holidays, and i’ve been slowly learning how to use it! feeling my italian heritage come through :p today is a yummy oat milk latte!

sure! it's from a meal kit comapny called "Marley Spoon" and serves two people, but you could totally increase that if needed.

I've been using the meal kit service as I got a free box or two from them, but It's a bit overpriced so I'm not going to long term. good recipes to save and re use though!

Ingredients Required:
200g mushrooms
1 capsicum
150g green beans
35g rendang curry paste
200ml coconut milk
150g vermicelli noodles
40g roasted cashews
coriander
5g toasted sesame seeds
1 tbs neutral-flavored oil
1 tsp white vinegar

Utensils Required:
Medium Saucepan
Medium Deep Frypan with lid

Step 1: Bring a medium saucepan of water to the boil for the noodles, then wipe the mushrooms clean, halving them, quartering any large ones. Coarsely chop capsicum and Trim the beans, halving on an angle.
Step 2: Heat 1 tbs of oil in a medium deep frypan over medium-high heat. Cook the mushrooms and capiscum, stirring occasionally, for 5 mins or until starting to soften.
Step 3: Reduce the heat to medium. Add the curry paste, and cook, stirring for 1 min or until fragrant. Stir in the coconut milk and bring to a simmer. (Ensure the curry doesn't boil or the coconut milk may separate) Reduce the heat to medium-low and cook, covered, stirring occasionally for 5 mins.
Step 4: Add the beans to the rendang curry and cook, covered for a further 3-4 mins or until the beans are tender and the sauce is slightly thickened.
Step 5: While the curry is cooking, cook the noodles in the pan of boiling water for 7 mins or until tender. Drain, then rinse under hot water to prevent the noodles from sticking.
Step 6: Meanwhile, coarsely chop the cashews and coriander, discarding the coriander stems. Add the noodles and 1 tsp white vinegar to the rendang curry and toss to combine. Taste the sauce, then season with salt and pepper. Divide the rendang noodles among bowls. Scatter with the cashews, coriander and sesame seeds to serve.

today i think i just went to a vegan restaurant for dinner that's run by a cult? I was joking to a friend about it looking eerily similar to "Loving Hut" despite not having the "Supreme Master TV" playing...

dinner was nice though, a vegan tum yum noodle soup!
