Congratulations! You're making me feel old. I'd say I was reading you from the beginning, but TPM was actually a few weeks old when I discovered it. To be fair both my husband and I were already fans of your journalism.

The Epstein thing IS about affordability! The GOP is willing to go to any length to mollify the elites, in the process showing utter disregard for the American people's economic pain. They throw us under the bus so they can protect child molesters from oversight.

Black beans paired with sweet potatoes really do benefit from a little garlic, oregano, cumin and ancho chili powder, and a couple of tablespoons of nutritional yeast. These things are great made with leftover beans from other recipes. You are right, though, keeping it simple is the gourmet secret!

My secret ingredient is to put a couple of tablespoons of nutritional yeast in the beans; it brings out their savoriness. It's great for make-ahead (filling only) or leftovers, just heat the filling in the microwave before assembling and cooking.

...add some cubed cooked sweet potato, and use just enough cheese to glue the filling to the tortilla. Make them fat so one or two is meal and I usually cook the inside of the tortilla some before flipping a filling, so it's crispy instead of doughy.

It's basically the same recipe I use for my kick-ass "quesadillas"--really more like tacos. I can get southwestern (e.g. pepper-laced) fresh tortillas here, use doctored beans cooked from dry so they can be extra soft...

When my kid was in college, we had a "call anytime, really" policy, which got a bit of a workout when he was working night shift. Luckily I'm the kind of person who can talk for a while and then go right back to sleep. But anyway, I wouldn't trade those 3am calls for anything.

We had a to say a prayer first, because apparently we had substitutes the entire year and they tended not to be up on the latest Supreme Court decisions. I got in trouble once for taking a bit of my Oreo during the prayer. Little heathen. 🙏😜

There was a new Great-Society program, though, that provided everyone in my class even tho,ugh it was only a half-day program, with a snack. Typically something like cheese and crackers, half a canned pear, and an Oreo.

My father told me about the first time he visited the school where I went to kindergarten, how he was truly shocked by the malnourishment and thin faces of many of the older children.
