Use the papain or bromelain tenderizer; perforate the meat, apply tenderizer and seasoning. Usually do before freezing or day before cooking. Make my own seasoning with rotisserie chicken seasoning as a base.

Most of our Christmas music we save for Christmas and Eve. Gym, few groceries, packed bacon, cut and packed steaks (forgot to season and tenderize), changed Honda oil, cleaned up interior. Still need to check tires and clean glass before our 2-day excursion.

Our mixer is a Kitchenaid about 15 years old. Having an issue with the head lock backing off but a rubber band takes care of that. Have been using the Cuisinart more since we got a plain lid - much easier to wash than the one with the slicer setup. What we'd really like is a pro mandolin.
