So many possibilities.

I would laugh at PacMan where you have to rotate the display to get the PacMan to fall "down". Probably as simple as mapping out your encoder into 4 quadrants and sending the current quadrant as a joystick input to the emulated game.

Or you could figure out how to prepare 4 different ribbons (Cyan, Magenta, Yellow and Black) and run paper through multiple passes.

(It's what I have do with my RISO printer, ha ha).
