Use OpenMW, install Tamriel Rebuilt and Project Tamriel, and basically whatever else you'd like. The base game of Morrowind is very nice and there's definitely quite a lot of things you can do to make it more enjoyable, but Tamriel Rebuilt and Project Tamriel are beautiful and a must-have in 2025.

cooking it can help remove the bitterness, making collared greens would probably be really good if you could account for it.
