Ambessa is now not just comically evil she is trying to balance vengeance for her daughter and self preservation as the pressure cripples her.
And also would have given better reason for her to side with Viktor cause there really isn't one currently.

I realised that I can actually post the designs for my sweatshirt on here with no fears! Originally I had a longer sleeve design in mind, but switched to have a smaller, yet embroidered, emblem. I may release a printed version with the longer design in a few days on my Fourthwall! #Arcane

As much as I like Mel as a character, I don't want her to survive the explosion. Her story has already come to a satisfying conclusion; therefore, I don't see a narrative reason to keep her alive.
Also, her death naturally facilitates Ambessa's insertion into the story as a secondary antagonist...

It would have been really interesting to have Mel gravely injured and in limbo ie. Viktor.
It would have made Jayce compromising his morals and building HexTech weapons feel more natural and given the audience more of a reason to sympathize with Ambessa.
