A high meat/carb excluding diet usually leads to other complications around 2 years down the line - not to mention the environmental and ethical ramifications. Forgoing highly processed and refined foods are always going to be a good thing, but I think you have bad sources.

Never had a problem using cold water in my dough but I also let it rise over night 🤔
