What I wouldn't give for a nice jello salad!, molded or un-, although I'm not sure I could fully enjoy it anymore knowing how jello is created. The ones with creamy, fluffy elements were the best.

Precisely! It had only pickly and crunchy things, and in the 1960s Midwest, it was mostly a feature of sit-down "steak and chops" restaurants where your steak would come with a spiced apple ring and the server would bring a metal thingie of basic baked potato toppings to the table with the entrees.
