Add:
1/2 cup any mix of barley, lentils, split peas
One drained, rinsed 14 oz can of chickpeas
Two 14 oz cans crushed tomatoes
1 1/2 c water or broth
1/2 tsp salt

Bring to boil. Reduce heat and simmer about 40 minutes. (Watch - it may need a bit more water or broth.)

While veg is sauteing, measure:
1 tsp ground ginger
1/2 tsp black pepper
1 tsp cumin
1 tsp paprika
---> You control heat: 1/2 tsp cayenne for hot, less or none for not

Add spices to veggies, stir. Saute 1 min. Add garlic, saute another minute.

(If you buy pre-made onion-celery-carrot mix, skip the dicing)
Finely diced one smallish onion, two celery stalks, one large (or two small) carrots
Saute veg in olive oil on medium heat 5 minutes
Mince two garlic cloves (can use 1 tsp garlic paste in a tube)

But you could buy pre-diced mirepoix, a can of crushed tomatoes, barley / lentils / split peas and go to town!
