I would still always show the theatrical cut as the first experience, but thays probably my bias having seen that one first (and more often)

Many extended edition scenes are scenes cut for pacing or just to remove redundant information.

I use contrast paints and 100% of my colour reference comes from a wraithbone prime...

You should also check out the theatrical cut versions, the extended editions arent really "directors cuts" and a lot of fans think the pacings harmed by them
