In our kitchen: Konro grilled miso salt cured cod served over Japanese sweet potatoes, rehydrated shiitake mushrooms, pickled gai lan stems and gai lan leaves simmered in a vegetable and shiitake mushroom stock. And an old fashioned made with Iwai whiskey, sake, fig syrup and ume bitters.
