Funny, we used to have them when I was a kid. My nan called them cod's eyeballs. No eye involved but still attached to bone.

I browned them on one side first in butter because monkfish can take that. Then finished them off with the rendered chorizo. Shallots, reduction of Noilly Prat etc.

Ha. My one ski trip was val d'isere, too advanced, even the green slopes. My bloke can do the blacks with a shilling between his arse cheeks so it's the avant/après ski for me.
