Tried a new dough recipe using 75/25 00 flour/semolina. Nice chew with crispy crust. Pepperoni, mushrooms, bacon, Kalamata olives, mozzarella with a spicy tomato sauce.

Double cheese, mushrooms, pepperoni, bacon and Kalamata olive on a thick crust. Dough I made is a hybrid of AP and bread flour, I mixed in Italian seasoning while mixing the dough.

Was craving old school grandma pizza today. Classico sausage and peppers sauce, mozzarella, parmesan, bacon, pepperoni and bacon. Baked in a regular pan, instead of my pizza stone.

Tried a different crust today, 75/25 ap flour/ bread flour. Was crispy and fairly chewy, I topped it with pepperoni, mushrooms, mozzarella, Parmigiano and brie and baked in my kitchen oven, it was freezing outside to use my pizza oven

72 hr cold fermentation dough, 6 hrs room temp and dressed with mozzarella, pepperoni,olives and grated Gran Padano.

Made polenta with my own twist to it... Roasted green and yellow zucchini, onions, eggplant and great Canadian sausage, finished with olive oil and drizzled some balsamic glaze and fresh cracked peppercorns.

Tonight's pizza, thin crust with mozzarella, slices of tomato and prosciutto, and ricotta cheese with fresh rosemary. Dough was cold fermented for 3 days, came out a little too dense for my liking.

Tried a new homemade dough recipe, an I am impressed. Pepperoni, mozzarella and anchovies on half. Cooked in a 925° outdoor oven in under 4 mins. I was impressed with the texture of the crust.
