It was a feast at Fashion in the Fields fashion show and brunch Sunday. Several local restaurants came to Hope Farms to serve us and support the urban gardens and education that @R4SFoundation promotes!

Green 🫛 peas have fiber, protein and even the c-word, carbs! They’re what I call a dessert veggie (like corn) and a great place to start your kids if they’re acting vegetable-adverse. Still good for you. Aren’t they pretty? #vegout

So you like radicchio, also known as Italian chicory? It’s neither a lettuce nor cabbage but it adds color and flavor to dishes. I had it in my salad. Radicchio is a good source of fiber, rich in vitamin K, and full of antioxidants.#vegout challenge ends 3/31

In TX we turn everything into a taco. Fish taco with cabbage. I grew up eating cooked cabbage, but many of us also eat it as part of a slaw. Cabbage supports digestion, and heart health, is rich in vitamin C and fiber. Just a suggestion as we near the end of our #vegout month

I do t eat radish often enough. I love the color and crunch but honestly forget to add them to my salad oftentimes. Consider: radish are low in calories but high in vitamin c, potassium and fiber and they’re a good antioxidant. We have 7 days left, let’s finish #vegout strong!

Today I’m featuring fennel. I don’t eat fennel often. I am roasting it with tomatoes and purple onions alongside my salmon, just a suggestion. Our #vegout adventure enters its last week. @r4sfoundation

The dessert/vegetable, sweet potatoes or yams! I add butter and salt and feast on this veggie that’s high in potassium, fiber, and rich in antioxidants, which may help reduce inflammation and protect against chronic diseases. #vegout @r4sfoundation

Not the best photo but I gobbled down some fried artichoke for dinner tonight! Artichokes are a great source of potassium, high in fiber, contain probiotics, and antioxidants that may lower cholesterol level levels thus reducing your risk for heart disease. #vegout
