Meal prep lunch (or dinner) for the week (recipe in alt text may be easier to read)

I've been eating a lot more cabbage lately to both reduce my calorie intake and increase fiber intake. I didn't include celery (because I don't like it) or carrots (because they're very sugary) but you can.
Seven servings of "Fart Soup" in 32oz deli containers Fart Soup 8 cups chopped cabbage 1 cup fresh parsley, chopped 2 cans chickpeas, drained 2 cans kidney beans, drained 2 oz kimchi, chopped (or sauerkraut or omit) 1 can fire roasted diced tomatoes 1 large onion, diced 2 medium red bell peppers, diced 5 cloves of garlic, diced 1 inch knob of ginger, diced 4 tbsp tomato paste 2 tbsp bouillon paste 1 tbsp caraway seeds 2 tbsp gochugaru or chili powder of choice 2 tbsp nutritional yeast 1 tbsp fish sauce (or Worcestershire sauce) 2 tbsp rice vinegar (or white wine vinegar) 1 tbsp olive oil Salt/Pepper to taste Place a very large pot on medium heat. Sweat the onions and peppers in the oil. When the onions are translucent, stir in the garlic and ginger and sweat until fragrant, about 30 seconds. Stir in tomato paste and cook another 30 seconds before mixing in all the remaining ingredients except parsley along with enough water to cover. Turn the heat to high and bring to a boil, then reduce the heat to a bare simmer. Simmer, stirring occasionally, until cabbage is tender, then turn off the heat. Adjust seasoning to taste and then stir in the parsley. This gave me 7 servings. Macros per serving: 284 kcal 2.6g fat (0.6g saturated) 1248mg sodium (before seasoning to taste) 53.7g carbs (13.6g fiber, 8.7g sugars, no added sugar) 14.3g protein
