I'd say the Ace Combat games are a good option for both PS1 and 2. 4,5, and Zero on the PS2 are generally regarded as the best of the series, 2 on PS1 is also pretty fun, and if you can get the fan translation 3 does some pretty cool different stuff. None are really that long or difficult either.
