E coli is not American. In fact, America has stricter standards on pathogens such as E. coli than Europe in that the USDA demands there it is not detected at all. If it is, the product is deemed ‘adulterated’. I know. I worked in the food industry in the UK and now the USA.

It’s not ‘rotten’. E. coli is a coliform bacteria present in animals guts. There are controls to reduce the risk of contamination and monitoring to make sure it is detected if it does.

Ground beef is regulated by the USDA FSIS, not the FDA. Inspectors are parents in plants every day.

Do you mean ‘offal’? Do people not know what that is so you have to say ‘organ meat’. Maybe it’s an American vs English thing, OR my age as I grew up with offal in England in the 70’s and 80’s. Steak and Kidney pie. Liver and onions at school. Heart and tongue lunch meats in sandwiches. Etc.

Coliform bacteria are a large group of rod-shaped bacteria found in the environment, including soil, water, and on plants. They are also common in the digestive tract of animals. Doesn’t mean that’s where they come from.
