We needed to make something to bring to a holiday party tonight. Used a portion of the pork belly and shoulder to get the right grind for Italian meatballs. Herbs came from the back yard. The person throwing the party doesn’t eat beef or we would have ground in some short rib also

Also used another portion of the pork belly to cure for bacon. Bacon @ $2.19 per pound is well below what I’ve seen at any grocery store near me.

Been doing more roast chickens. Not my typical go to in the winter, I throw them on the grill in the summer a lot though.
Did convection for this one and cooked it on a wire rack for a radiant cook, all the way around. Pretty simple weekday meal #food

Whenever the Eagles are getting embarrassed I make a bunch of photos like this and send them to this guy in my office, who’s from Philly. AI generated images have made sports trash talk so much easier.

Chives, Dill, English Thyme, Italian Oregano, Thai Chilis, Jalapeños, Fennel, San Marzano Tomatoes, Green Onions (that are kind of out of control at this point) Italian Parsley, Mint, and Thai Basil.

To get my Asian mother-in-law to eat orzo pasta, we told her it was “Italian fried rice.” She loved it. If we used the word “pasta” she would have made rice for herself and not eaten it.

Today was cleaning day for by grill. From using it 2-3x a week, it gunks up quite a bit over a year’s time and I have to run it at 700 or so to burn off all the grease and build up. That thick, dark smoke is grease burning. Pretty gross. 1/2
