This recipe calls for 50% roasted and ground stale bread: waste-not-want-not can be v tasty! (Keeps fresh v well and taste changes w types of stale 🍞 in the mix).

Roasted cornflour and yellow wheat make for a vibrantly coloured crumb. Recipe also allowed me to use up some leftover mashed potatoes. Sunflower oil and seeds add even more flavour. Will have with oven-roasted asparagus this eve.

Der folgende Text steht am heutigen Karfreitag in meinem Fastenkalender, der gedruckt wurde noch bevor Menschen wie Kilmar A. Garcia widerrechtlich nach El Salvador deportiert wurden. Auf ein solches Kreuz würde ich seinen Namen stellvertretend für die Gefolterten im Terrorgefängnis schreiben.

Red wheat with apple sauce and walnuts. Recipe asked for yeast. Will try w sourdough next time. For now, looking forward to having some Swiss herb cheese and a cup of coffee with this week’s version.
