I like Mercer knives, I've had an NSF santoku for a few years now and it's easy on my hands and holds an edge well. Been meaning to pick up a nakiri from them for a while

Yeah, ngl I didn't even think Hackaday did "reporting" like this. I've followed them mostly to see cool hacky projects with old tech and microcontrollers
