This looks like a third tier, low class Golf Course. Courses with class and dignity do not allow you to wear a cap indoors, other than maybe the bar.

About a year ago I started cooking roasts by putting a good sear on all sides, then letting the sit in a 275° foot 5 or 6 hours braising in liquid. No need to watch over them. They come out so tender they fall apart. And flavorful? Oh, so good!
