Fellow winemaker here (Ontario, Canada). I’ve always included stems when I want to keep pH low but drop TA. Loads of K+.
Never worked with Grenache Gris but is that the counter balance you want?

Passive indexes have really low fees. And by their nature as as good as the market. Won’t over perform, won’t under perform.
