*At least that’s my theory. Like home economics have to be market efficient for the home. I could be wrong about my theory but it kinda jives with having to cook a nice dinner in this modern, contemporary age and it’s all influenced by the 50’s.

Anyways, I’m making an onion Gruyère tart. Or at least getting the filling made. Tomorrow I’ll bake it. Although I should say I’m a *terrible* baker so I didn’t make the pie shell from scratch. Trust me, I already have the boo, in my head, in my own voice.

You want to let the onions sit there in a layer for a little while in order for the sugars inside them to break down. If you have the temp to high you’ve got to stir them around too often. Cookbooks/online recipes are written with speed in mind because of convenience in a capitalist system*.

Seriously, I’ve come across sooo many recipes, online or in a cookbook, where the directions say you can caramelizing the onions in 20-30 min at medium. It never works out and so I used to turn the burner up to medium high to only have them burn.

My advice is always:

Slow-n-low so you can let the onions brown up nicely without burning or needing to stir as often

Add ~ 1/4 cup of water (or broth depending on the situation, I prefer veggie) every so often, especially when you notice that the onions are sticking to the bottom of the pan.

I’ve been watching the Dems be more and more neo-liberal to fashy since I was five. They aren’t the party I thought I grew up admiring and voting for in my first big election in ‘93. I copped onto their grift not long after that. I realized under Clinton just how much and for how long the Dems had…

I mean, I don’t know anything. All of this is coming from a 50-year old Indigenous/1st Gen American who dropped out of college three times, has worked some variation of customer service job for 40 years with some dips into agriculture, manufacturing, municipal, and healthcare professions.

And any center left-leaning liberals will then form a new Democratic Party, one that would, at least at the start, wouldn’t be as beholden to corporate/banking donors. It’ll be interesting to see if membership in the DSA starts picking up since NYC and Minneapolis’s results from their democratic…

…and maybe some independents but they’ll be more than happy to continue building on and enjoying the fruits of the post-90’s/post-9/11 GOP legislation and governance.

Meanwhile, the Democrats, who’ve been twisting themselves into pretzels in repeated attempts to prove that they’re Reagan-era Republicans will finally become the hard right-wing party they’ve been always wanting to be but we’re always so queasy to admit. They might pick up disaffected GOP voters…

And I’ve been saying this since 9/11 and the beginnings of the War on Terror, the Patriot Act, the shebang: in thirty years the Republican Party will no longer be viewed as a legitimate political force, they will be a joke, they will be the new nazi party, and no one will ever take them seriously.
