Anyways, I’m making an onion Gruyère tart. Or at least getting the filling made. Tomorrow I’ll bake it. Although I should say I’m a *terrible* baker so I didn’t make the pie shell from scratch. Trust me, I already have the boo, in my head, in my own voice.

You want to let the onions sit there in a layer for a little while in order for the sugars inside them to break down. If you have the temp to high you’ve got to stir them around too often. Cookbooks/online recipes are written with speed in mind because of convenience in a capitalist system*.

Seriously, I’ve come across sooo many recipes, online or in a cookbook, where the directions say you can caramelizing the onions in 20-30 min at medium. It never works out and so I used to turn the burner up to medium high to only have them burn.

My advice is always:

Slow-n-low so you can let the onions brown up nicely without burning or needing to stir as often

Add ~ 1/4 cup of water (or broth depending on the situation, I prefer veggie) every so often, especially when you notice that the onions are sticking to the bottom of the pan.

…team keeps winning, that their culture is dominate, that they’re always aggrieved/under attack but always strong, powerful, and chosen by God. We can say that they’ve been lied to but that takes away their responsibility, their culpability, their own lack of empathy and introspection.
