You can, but the article I was looking at said you would only want to infuse that for 8 hours or it would go bitter.

I used The Boozy Ginger’s recipe, and only tweaked it by using dark brown sugar rather than white, and added the orange zest of the orange I juiced as well. I kept the leftover cooked cranberries - sweet, spicy and I bet fantastic with ice cream.
