Nilgiri Winter Harvest

A black tea available from Pearl Fine Teas, this is one of my favorites and would be a mainstay if it were easier to come by. Lighter but smooth taste compared to most other black teas.

Black Vanilla Bean

Blend of black tea and vanilla from Pearl Fine Teas. To be honest, there is an odd bitter/medicinal note that throws off what would otherwise be great. Generally I've gotten very good blends from here but rarely there's a miss.

More adaptations of coffee drinks to tea. A cafecito uses a bit of espresso whipped with sugar; instead, I'm using a bit of black tea with sugar and condensed milk. Pour that over brewed Ceylon tea. Not quite the same texture, but a good flavor still.

Using a moka pot for an espresso shot, and then the spices and sugar in steamed almond milk. Cardamom gives it a distinct Arab coffee aroma and flavor.

Added to a pour-over coffee. It's rare I add anything to coffee besides milk but this is still good. A warning to skip anise if you don't really love it since it highlights the bitterness.

Sweet Lapsang Souchong

Balancing the smokiness of lapsang souchong with anise seed, cocoa nibs, and Japanese cinnamon fruit, plus a little milk and sugar. Worked great, do recommend.

Japanese Cinnamon Fruit

New ingredient (for me). Scent of cinnamon but when brewed directly it's almost like a root tea with a light cinnamon flavor. Note that cinnamon itself is the bark of the tree; this, instead, is the dried fruit or berry of the tree.

Honeysuckle Yunnan Gold

Honeysuckle buds and Yunnan Gold have a similar shape and aroma, interestingly. However, in blending it, you can definitely tell the difference in flavor and it actually clashes. It was worth a try for the lesson, but not a combination I'll keep in mind.

Honeysuckle

I used to pull apart honeysuckle flowers and taste the nectar as a kid. These have a similar aroma but the taste is much milder than you might expect. Nonetheless it's ok.

Fresh Chamomile

Fresh from a friend's garden. This is a different league from regular dried chamomile. The aroma is so sweet and fragrant, almost like jasmine, and the taste has none of the astringency and all the good flavor of chamomile.
