It's such an unscientific statement to be sent by an exec at FDA. If I wrote "unlikely/probable/possible" in a paper in graduate school I would get a bad grade... no scientific rigor whatsoever.

The hardest part of making sourdough (in my humble opinion) is knowing when the bulk fermentation is done, it requires knowing what the dough should look like, understanding the dough ratios and the environment (temp, humidity etc.). You can get real nerdy with this stage of sourdough making.
