I'm not very positive in my making of elderberry infused honey as the temp wouldn't stay where I needed it so on to rose petals infused honey as I now have a better way to control temp for the honey and not enough elderberries to redo the infusion!

Honey infused with elderberry going on today! The last one was a bust so repeat it is! Anyone else doing infusions? How do y'all keep the temp regulated with a double boiler?
