I'm glad that we tried them, and I might make them again using the standard amount for a different Sunday dinner, but not for a holiday meal. Of course the best thing was just reflecting on the Easter message and enjoying a delicious meal with my family. Hope you all had a special day with yours.

Baked them for an hour. The top was bubbly and they looked done, but texture of the potatoes was not perfect, maybe they needed to bake longer. Everyone said they were "fine" and good with the ham, but my sons were disappointed that we didn't have the usual mashed potatoes and gravy.

So I tried the Easter potatoes, using the salad shooter and real potatoes. When I weighed 2lbs of potatoes, my husband suggested it might not be enough to feed our crowd of 10 adults and one baby, including one teenager with a big appetite. So I adjusted the recipe and made more.
