Fry it up a while. Get the oil in all the crannies. Put the turkey bones and bits and bobs in there and top with water—not pictured bc it’s ugly lol. Add bay leaves, kaffir lime leaves, and peppercorns (10 black, 5 Sichuan). Let all of it go for a swim.

So get a shit ton of garlic cloves, nice fat chunk of ginger, a jalapeno, and green onions. 1 1/2 yellow onion, 1 purple shallot, An Amount of celery. Chop em up and fry in some sesame oil. No need to remove the skins on anything or anything move the roots or w/e just go all in
