165F is target for instant pasteurization. 3 minutes at 145 kills the same amount of bacteria. The challenge in the turkey is getting the brown meat hot enough to break down connective tissue (180-190F) while keeping the breast in the 140-150 zone for just a couple minutes.

Avec l’entrée en vigueur devancée de la Loi 14, la STM n’avait plus aucun incitatif pour négocier avec nous. Le gouvernement nuit à notre négociation en sous-finançant le transport collectif. Il en rajoute une couche avec l’arrivée de sa Loi 14.

Air traffic control in Canada was privatized into a non-profit funded by airlines about 30 years ago and seems to work about as well as US. Likely the only privatization success story in Canada too
