You need to cook it - it's got a core like an apple or pear but it's HARD. You can poach them or stew them and they have a wonderful floral aroma. Both cooked and raw. Leave a few on a warm sunny window and the whole room smells magic.

Quince is a bit like the lovechild of a pear and a crab apple, with some cirtus notes added for fun. It's amazing. The pulp is what's left in the jelly bag after draining the juice. Often used to make dulce de membrillo.
