I put pancetta, fennel (bulb not the seed), mire poix, sage, thyme, marjoram, parmesan, egg (binder) broth and melted butter in mine
Its a mix of white and rye bread cubes- the rye gives a great earthy flavor
I baste it with pan juices, when i baste turkey
