The Everest may be a starter but adding equipment from other licenses and core bonuses can make it into an "ace custom" much like the Red Shoulders.

If you're looking into 3d Printing as an option, I remember Papsikel Minis having quite a varied assortment of mechs that might fit what you're looking for.
