My chili recipe. If you don't own a smoker (I don't), you can skip the chuck roast or find it pre-cooked and frozen in your local butcher shop.

This might looks like a bowl of authentic Texas red, but it’s not. I’m going to dress it up a bit with beans, tomatoes, and beer—turn it into a meal that will last days.

There’s no chili powder in this. All of the flavor comes from the dried chiles, toasted and pureed—just like the original Texas bowl of red. This is the magic potion.

If you wanna make chili this weekend, I’ll post my recipe in a bit. I’ve been refining this over months for a cook-off this weekend. Absolute explosion of chile pepper and beef flavor. Doing some prep now.

Hardest part about this: not touching it until tomorrow. Literally always better the next day. Seems a little too sweet; adding Tobasco and cayenne tomorrow.

They said it couldn’t be done. That a Minnesotan couldn’t perfect chili. But these secret spice blends, ingredients, and time I’m about to spend toasting and blooming three kinds of chilis would disagree.
