Genre is often used as a qualitative stand-in for "low quality" and "not Art" in lit and film/tv. So, to some, the opposite of genre is art, but that's a false binary too.

In terms of organization, if not genre, you could use mode (doc, experimental, narrative, transmedia), but that's different, not opposite. I agree with the other commenter that it's genre all the way down -- today's literary novels are still genre (genre: literary), and "non-genre" film/tv is drama.
