A neighbor broke the ground up for me this summer with a backhoe that he’d rented for his own use one weekend. The cardboard is to keep the weeds down - functioning like landscape paper. I will likely layer mulched leaves and chipped yard debris over it. Then let it sit for the winter like that.

Finished off with some lemon zest, lemon juice, and some capers. (Also took down a container of vegetable broth I had prepared and frozen before and I used as necessary to keep it from getting too sticky while cooking.) 6/7

Finally time for protein. I cut up 2 cooked salmon fillets into bite size pieces (pan fried the night before with Old Bay seasoning, salt, pepper, and garlic powder).

At this point I remembered I had about one serving left from the Aldi-brand packaged fettuccine Alfredo side dish I made for kids’ lunches earlier. I dumped it in and stirred it hoping it would just get lost in the new meal. 4/7

Next, I added the cooked and drained fettuccine into the pan with the greens. Added 2 chopped fresh tomatoes. Cooked a bag of creamed spinach in the microwave and added it to the pan. Then I stirred in about a cup of heavy cream and seasoned heavily with salt, pepper, and fresh parsley.
