A few months ago, I made a vat of dal and froze half. Today it was warmed up and I made a mango, coconut, cucumber salad to go with it. In addition to the aforementioned ingredients, the salad also has jalapeno, lemon and lime juices, a little brown sugar and red pepper and cilantro. Delicious!

Baking is not my forte, but cobbler is easy. Four berry cobbler (blackberry, blueberry, raspberry and strawberry) with a cornmeal biscuit topping served with churros ice cream. Yummy!

Honey orange chicken thighs and a spinach salad with tomatoes, red onions and vinaigrette. Seasoned the chicken with salt and pepper, gave them a quick sear and finished them off in the oven surrounded by orange slices.Glaze was butter, garlic, orange juice, honey, soy sauce and red pepper flakes.

I made a sheet pan dinner of roasted asparagus, salmon and garlic seasoned with salt and pepper. The roasted garlic was used, along with olive oil, in the couscous I made while everything cooked. A dollop of pesto on the salmon, a squeeze of lemon over the whole plate and you’ve got a tasty dinner.

While most people fire up the grill on Labor Day, I don’t have that luxury, so I panfried chicken breast with powdah—honey, brown mustard and turmeric specifically, as well as salt and pepper. I paired it with cheesy baked polenta I made while the chicken sizzled on the stovetop. Delicious!

Was able to snag a half-price whole chicken. I roasted it with shallots, dill, salt and pepper. Served with the giblet gravy I made while the chicken roasted. Paired with cornmeal-crusted fried zucchini. Tasty and low-effort!

I made another @katmabu.bsky.social convert today solely by wearing a t-shirt! I sent this picture of her cat Mr. Beef to his mama. She said she loved the picture and the shirt, wanting to know who Kat Ab…was. I gave her the website and she said it sounds like her kind of candidate!

While this book is very well-written, I don’t feel it’s aged as well. Published in 2019, it’s an argument in favor of liberalism’s incrementalism, which might have been more believable before fascism’s speedy bulldozing of democracy. When your house is on fire, you don’t incrementally put it out.

From Hetty Liu McKinnon’s memoir/cookbook Tenderheart: Sesame broccoli, garbanzos and crumbled tofu (now cheaper than any meat!). Flavored with garlic, crushed red pepper flakes, toasted sesame oil and seeds, green onions, salt and pepper. Looks boring, tastes terrific! #whatscooking 🍽️💙

This may look like a boring bowl of spaghetti, but, oh, if you could smell it! If you could taste it! This spaghetti has a sauce loaded with lemon (juice and zest), Calabrian chile paste, garlic, olive oil, butter, basil, salt and pepper with squid (now cheaper than eggs!). #whatscooking 🍽️💙

Now that I can no longer afford classes at the Newberry Library, I just pick a class and read the books featured. This year, it’s a Claire Keegan course. I wasn’t sure I wanted to do another female Irish author after enduring Maeve Binchy, but this chick kicks Binchy’s ass. 📚💙
