For me it’s always friends and colleagues (depending on where the doubt comes from). But that’s a matter of luck of course, not everyone has supportive people to turn to.

As long as the esim is transferable, you should be fine. Otherwise you might get some fun with getting new esim and banking apps when you change your phone.
