Dinner tonight was bbq lamb koftas with salad & bbq corn. Koftas from the butcher. Absolutely delicious, should have made tzatziki.

Ginger biscuits just out of the oven. First biscuits I’ve baked for Christmas. For a neighbour who’s helping look after our dog. Very easy recipe. Few more in the freezer for emergencies. 🍜🍽️🫚🎄

Dinner tonight was chicken tortilla soup - served it with a cheese and black bean quesadilla. Made the stock from a rotisserie chicken carcass. 🍜🍽️🫘🌽🥑🍗🍅🧅🌶️🥕🍋🟩

Just made my second batch of fruit mince pies. These will join the others already in the freezer. When we want them , bake straight from the freezer. Most will be given away.

Just made my second batch of fruit mince pies. These will join the others already in the freezer. When we want them , bake straight from the freezer. Most will be given away.

After dinner tonight we had chopped apple cake. Wanted a dairy free cake - this one uses oil instead of butter.
Recipe calls for bicarb soda, but I don’t think any of the other ingredients are acidic. May try with baking powder next time. Looks like a brick!

Here’s the recipe. It calls for desiccated coconut which is unsweetened in Australia. I used to be able to buy it in Whole Foods in the US.
