I feel like symmetry is a useful starting point but still doesn't fully capture the "idea" of what groups are.

For example I don't think of a rubik's cube as having billions of different symmetries, but as a single object with several billion different configurations all reachable from the other

In some sense groups are like the building blocks of most other algebras. You can also mix-and-match the axioms of groups to get other structures like monoids, lattices, modules, etc. which are all neat in their own ways
