Trek III is difficult as while it is sequences from the film, it's done as security footage.

It could technically be Star Trek III and Star Trek IV where characters watch sequences from the prior films.

I think the next time a Star Trek character watches Star Trek is in Encounter at Farpoint where Riker watches the "Previously on" section.
