i could suggest datex, tho i've not worked with it. It's a sewable fabric-backed latex that comes in a few colors, if you can find a good place to purchase it. This place appears to have a few grays (but there may be better sellers out there)

Not really. Thicker strings won't fit on the bridge or tuning pegs or sit in the nut properly, and tension will be all wrong from the shorter scale length (way too loose if you go for standard tuning)
