I have a bit of a personal window into that via my family and it's well outside my wheelhouse, but I'm consistently shocked how little this is appreciated. The number of businesses owned by people with no one to leave them to, hanging on hoping for a buyer, but likely just facing closure. Oy.

My daughter has gluten issues (not serious or fullblown yet) so I know what you mean.

I know this is a typical lament, but FYI, when we were in Europe for a few weeks this summer, she ate all the bread and all the pasta and ... nothing. No effect. Totally fine.

My kids now routinely eat food that my grandparents wouldn't have even heard of until they were retired, and that my parents would have found intriguingly exotic.

I find this topic endlessly fascinating. I use my grandparents as examples. They went, in their lifetimes, from thinking pizza was a weird, exotic food, to learning to love Indian, Japanese, Thai and Chinese. Pretty safe-for-whites dishes from each, but that was still a massive boom.
