Day five of the Oregon Providence, nursing and Dr. strike, more than 5000 nurses and more than 140 doctors striking against Providence health systems over working conditions, and patient safety.

In Oregon, the largest health and hospital system in the state is Providence. 5K+ nurses and doctors went on strike beginning yesterday covering 11 bargaining units, eight hospitals and six clinics throughout the state.

Their issue? Safe staffing.

For this version, I have regular biscuits and rice flour biscuits don’t be impressed, the regular biscuits are dough premade from Walmart, the rice flour biscuits for my gluten-free family members are a gluten-free Bisquick mix.

For dinner tonight is a family favorite, a vegetable pot pie soup.

Make a vegetable soup base, add every frozen vegetable you have in the house, cut up some potatoes and throw it in there as well. Season it and then add cornstarch to thicken it a little bit.

Make biscuits. It’s that easy.
