I think I'll do the no preheat bake again. easier, and didn't see any negative impact.

this sourdough has gone through some long fridge spells. keeps on ticking.

that's one drawback of sourdough. it can consume alot of your calendar for 1 loaf.

a little dark on the bottom. i had plans at the end of the bake, and had to leave a wee bit early.

i decided to turn off the oven, put the lid back on the dutch oven, and let the loaf cool with the oven.

super tasty, even though a little dense.

which is the autolyse step? i always use a stand mixer.

my recipe has 60% of flour and wet ingredients, then rest overnight in fridge.

then add remaining flour, AND SALT, before more mixing and kneading.
