Monday evening I had a lot of eggs to use up. The result was this ‘Frittata’ (with cottage cheese, diced red pepper, onions & diced potatoes) and a Salad, including edamame beans - trying to ramp up our protein 😊

Red lentil, Butter Bean & Veg Soup in Slow Cooker (high for 5-7 hrs) for a chilly January Saturday afternoon - all the veg vitamins and a protein bonus from the lentils/beans and a couple of big spoons of Greek yogurt to finish after blending.

Leftover turkey from Xmas was used in these deep puff pastry tarts - each tart was filled with a layer of cream cheese, then chopped cooked turkey, then some with cranberry sauce and others with caramelised onion. Good hot or cold, they were yum!
