I think that’s a good combo of cheese, I usually do a really sharp cheddar and gruyere as well for cheese sauces. Just a little longer on the roux, sounds like you’ve got the rest covered!

Trust your instincts on cooking the roux a little longer. Also, you can reduce the amount of flour a bit in the bechamel since you’re adding cheese. Some natural reduction after adding the dairy before the cheese would also help with thickness if you added less flour.

It’s hard enough to get adults through an airport and onto a plane. I can’t imagine the stress of adding dependents on to that. And driving is a whole different animal. Godspeed to you, you’ve got this.
